I thought I was going to have to wait until Autumn came around to share this recipe with you, but as today is wet, windy and dreary outside I believe some of you will be grateful for a comforting and warming dish that requires plenty of oven usage. That being said, this potato pie is as summery as a potatoes pies go; with plenty of fresh fish and Mediterranean flavours from the chorizo, I take back my comment and say that this dish is suitable to all weather outcomes – not just us rubbish weather British folk!

  • ½ celeriac – peeled and sliced
  • ½ small swede – peeled and sliced
  • 1 large potato – peeled and sliced
  • 1 tbsp butter
  • Salt and pepper
